Banana Bread

The next best thing to carrot cake has to be banana bread. The first bite of this recipe was a perfect blend of vanilla, honey, and a hint of rum flavors that would fit right in. I used almond flour and coconut palm sugar to bring out a warm, rich sweetness that’s just what we crave during the long winter months. If you’re looking for a quick, simple, and satisfying bake, this banana bread is the perfect choice.

What You’ll Need…

  • Equipment:

    • 2 large bowls: One to mix the dry ingredients and the other for wet ingredients.

    • Whisk

    • Silicone spatula

    • 8X4 (medium sized) loaf pan

    • Measuring cups/ spoons

    • Food scale (optional)

  • Preheat oven to 350 and grease loaf pan with a non-stick spray or with butter. Set aside.

Wet Ingredients

Banana and Butter. Add the stick of butter to a measuring cup or large bowl and microwave for 1 minute, or until melted. Pour the butter in a large bowl and add the bananas to the same bowl and mash with a fork.

Eggs and Vanilla. Pour the vanilla extract and egg to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.

Dry Ingredients

Spice and Flour. In a second large bowl whisk together the flour, sugar, baking soda, salt, and cinnamon.

Wet and Dry. Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined. Pour the batter into prepared loaf pan and bake for 45-55 minutes until a toothpick inserted in the center of the bread comes out clean.

Enjoy with a nice cup of coffee for a sweet simple breakfast or serve warm with ice cream for dessert :).

  • 2 Large Eggs

  • 1 teaspoon Vanilla Extract

  • 2 Cups Almond Flour

  • 1 Cup Coconut Palm Sugar

  • 1 teaspoon Baking Soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon, plus more for garnish

  1. Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray or grease with butter and set aside.

  6. Garnish with banana and cinnamon if you desire. Serve warm on a plate with your favorite cup of fresh coffee or ice cream.
